Target, Tory and Tuesdays

Hello Tuesday!

I much prefer Tuesday’s over Monday’s, but Wednesdays are my favorite day of the week. Yesterday was a hectic day, you know one of those days when nothing goes as planned.

First I missed body sculpting so I decided to run on the treadmill for 40 minutes. Not Bad

Then I decided to take  a Turbo Kick class which to my surprise was actually a Zumba class. Not Bad

Had lunch with the Little Apron. Awesome!

Picked up a prescription at the pharmacy (little cold).

Bad…very bad! It took them 2.5 hours to get my prescription filled!!! Ughh

After all the madness the day ended up on a good note thanks to this…

{Organic ribs and chicken from The Fresh Marked seasoned with Penzeys  BBQ 300 and topped with

Neelys BBQ sauce. Sides included whole saffron basmati rice and veggie casserole.}

and this…

A skinny cow chocolate truffle popsicle. Sooo good and satisfying. I’m not so crazy about the Hubs beer choice but it was cold and complemented the dinner well.

Today’s agenda consists of:

~Having a good day

~Making good choices

~Cleaning the fridge

~Athletic conditiong

~View Tory Burch’s fashion show live!

~Target trip {Missoni for Target (Can’t wait)}

But first… a little fuel.

Whole wheat pancakes with chia seeds, flax meal and banana.

Topped with a little more nanner (1/2 medium total), couple spoonfuls of blueberry yogurt, drizzle of honey, and a sprinkle of Bear Naked fit granola.

It’s a cloudy rainy day here in Indy. Hopefully it clears up by tomorrow morning.

Depending on the weather I may wear,

Shorts? Pants? Tights?

Long sleeve? Short sleeve shirt?

Perhaps an umbrella? 🙂

So many choices, and so much to do today. Wouldn’t it be great if we could stop the clock to get some work done or even rest!   I feel like I have so much to do but no matter how hard I try nothing seems to  get done. Ughhh!

okay, okay, this is not a itch-fest, I’m just sayin.

Today’s agenda:

  • First things first, 500 festival mini-marathon  expo  (so excited)
  • Buy a new watch (lost mine)
  • Pick up a few grocery’s (pasta)
  • Bake some goodies (distressor)
  • 20 minute run (warm up the legs)
  • Rest (must must do)

I’m not the type of person who like to sit still for more than an hour. Go figure.

Breakfast this morning was heavy in carbs but lighter than yesterday’s Maria bowl.

Swirled pancakes

  • 1 serving of kodiak cakes
  • topped with 2 tbsp lfv yogurt
  • 1 tbsp homemade raspberry sauce {warm berries in a sauce pot add a small amount of water and a pinch of sugah)
  • 1 tbsp sunflower nut butter
  • 1/2 small banana

After applying the toppings take a knife and swirl away.

Good morning! Good morning!

Only two more days till the 35th running of the Indianapolis 500 mini-marathon!

For the next couple of day I’ll be putting the finishing touches on my training:

I plan to get in:

  • lots of water
  • one more yoga session
  • plenty of rest
  • good food
  • gear check

After working the past three days (12 hour days) and having so/so breakfast I knew today a big bowl of cereal of was in order.

May I present you with the Maria bowl

3/4 cup brown rice cereal

1/2 cup strawberry yogi crisps

1/2 cup soy milk (all that was left)

1/2 cup almond milk

Topped with:

1/2 small banana

1/2 cup mixed frozen berries (warmed first)

1 tbsp nuttzo butter [you can learn more about nuttzo (here)] I  think that was one of my very first post! cringe!

sprinkle of chia seeds and coconut

Happy Cinco de Mayo

a day in the life of my stomach…

Breakfast:

1 serving of kodiac pancakes. These pancakes are great! Just add water! No eggs or oil!

Topped with 1 small banana, 2 tbsp Trader Joe’s peanut butter cream cheese (look it up), 1 tbsp apple buttah, and a sprinkle of chia seeds.

Kept me full: all morning, throughout and after 75 minutes of HOT vinyasa yoga. In class we worked on hand stands, and I can almost do one!! I  just need a little more confidence and better concentration. My teacher made a good point today, something along the lines of (strength is more than physical it’s also mental). Meaning be in the moment, focus on the now and allow your inner strength to shine through.

Lunch:

My very first Whole Foods salad bar. Lettuce, cabbage, artichokes, beans, quinoa, cauliflower, beets, peas, zucchini, blue cheese and avocado lime dressing, and an apple (from home).

I also purchased a sparkling water and a hugh jass roll. The roll was FULL of  nuts: pepitas, poppy seeds and some other things? I toasted it first, ate most of it and tossed the rest.

After lunch I had a 1:00 appt with my new hairdresser. To be revealed soon.

Second workout of the day was with the Little Apron and her school running club. It’s so nice to be a running mentor to 4th, 5th and 6th graders.

Dinner inspiration was pizza. Shrimp, onions and bar- b- que sauce were involved.

I sauteed 1 white onion in evoo, added 1 # of shrimp. 1/4 cup of bar- b- que sauce and 1/4 cup H2O.

Simmered for about 5 minutes.

Meanwhile I rolled out the dough (trader joe’s brand) and pre-baked it for about 7 minutes before adding the toppings. I think baking the dough first makes for a crispier crust. Once the shrimp/onion mixture was added I then topped it with pepper, garlic powder and a very small amount of mozzarella cheese.

Side salad of course.

And some very cheap white wine that was suprisingly good. Tisdale chardonnay all the way.

Dessert:

Chocolate covered pretzels.

Nutella blend

I woke up this morning to a cloudy rainy day 😦

Mr. Sunshine where did you go?

I also woke up hungry and decided to have something sweet. Insert: NUTELLA!

Toasted whole wheat english muffin with 1 tbsp of decadent Nutella, 1 tsp raspberry preserves, 1 medium strawberry sliced, 1/2 banana grilled, sprinkle unsweetened coconut, sprinkle of bear naked fit granola. Grilling the banana makes it softer and brings out more of the flavor.

This breakfast was definitely sweet, maybe a little too sweet? I think it was the  raspberry preserves that put it over the top.  Had I used strawberry jam I think the flavors would’ve meshed better. Still better than a doughnut without the tummy ache or sugar high.

More fresh market coffee. The Spring Blend puts a little pep in my step!

Todays agenda includes:

  • Athletic Conditioning (helps with speed and agility)
  • Organizing this crazy mess:

I purchased these letter trays at Target yesterday and thought they would make great mail sorters.

  • Lunch date with the little apron
  • A few calls to Einstein bagel and Panera bread  (in search of breakfast donations for an upcoming girl scout trip)

The rest of the day is wide open to make good choices.

Smokey Mountain Run

 Hey y’all sorry I’ve been MIA for a while.  The hubs and I got home from Gatlinburg, Tennessee Sunday night around 11:00PM. Ever since then I’ve been trying to catch up on laundry, grocery shopping, and bill writing. You know all the fun stuff in life that has to be done or else the sky just might cave in.

Any who, we had so much fun in the Smokey’s I wanted to blog about it every night but when your 21ooft up in the mountains reception is not very good. Here are a few pics and highlights from Aunt-T’s birthday vacay.

The inside of our two-story cabin, complete with five bedrooms, living room, dining room, kitchen, breakfast nook, family room and game room. Plenty big enough for eight people. I spy a brown furry animal. BEAR!

There were so many nooks and crannies to explore inside,  look what I found!

Chocolate…SCORE!!! I had a few M+ M’s, blue being my favorite and 2 mini snickers bars.Do you have a favorite M+M color? Or am I just corky!?  The snickers bars were just meh, I think I’ll stick with the good stuff. Dark chocolate Endangered Species.

After we all settled in and had dinner we threw our swim suits on and jumped in the hot tub.

Saturday morning I woke up refreshed and went on my scheduled 45 minute run. The whole group was supposed to join me but I only managed to grab two of the crew. Mr. Apron and our new friend Tyrone were good sports 🙂

After the run I did three sets of 20 push ups and 2o dips.

Total run: 45 minute loop on hilly terrain

Distance: Not sure? Maybe 2 or 3 miles, due to the conditions.  I need a Garmin, desperately 

Elevation: 2168 ft. My lungs did not fail me. I actually felt pretty good.

 Temp: 42° Feels Like: 38° Humidity: 62%

Pre-fuel: The previous nights dinner. I didn’t feel like eating before the run a rare idea for me.

Whole wheat spaghetti with mixed vegetables and ground lean beef. I only had a small amount of meat, I tried to grab more of the veg.  A simple side salad drizzled with raspberry wine vinaigrette. Beverage of choice was a little vino rojo.

Post-fuel:

A bowl of Kashi with soy milk topped with a medium sliced banana, 1 tbsp Nuttzo and a sprinkle of chia seeds.

A good work out can be done anywhere, you just have to creative. Who knows you might even make a new friend along the way.

Four little things that make my job easier:

First up is the cafeteria.

Twelve hour work days can be mentally and physically taxing. Nurses require both stamina and strength, but more importantly nutrition.  If I don’t have time or forget to pack my lunch I know a mixed green salad is just a few floors away. If I get hungry at 4:00 in the afternoon and can’t wait another four hours to eat again, I’ll head to the cafeteria and buy a healthy snack. A piece of fruit, veggie sticks, soymilk, or a kashi bar are my usual suspects.

On a normal day I prefer to eat breakfast before work but this morning I wasn’t very hungry. I have no problem eating dinner when it’s dark outside but when it came to today’s breakfast I assumed wait until the sun comes up.  I’m having a hard time eating at 6:00 AM, when everyone is sleeping and the sun hasn’t risen. Spring can’t come soon enough!   Once I got hungry around 9:00 and was able to sneak away for a few minutes I hit up the yogurt/oatmeal bar.

If my day gets a little hectic and I find myself in need of some retail therapy I can escape to the gift shop during a lunch break. I’ve found some really nice  pieces of inexpensive jewelry, hand bags and home décor at ours. The gift shop is also full of information; they carry a wide collection of magazines like Martha Stewart, Rachel Ray, Glamour, Self and Real Simple.

Of course you can’t forget People and US weekly, hey; I have to get my pop culture and fashion news in somehow.   Do you have a favorite nonsense mag?

Third is the endless supply of cheese and crackers.

Last but not least are the wonderful people I work with.

I brought my own plastic silver ware and napkin from home, that I tucked into my new lunchbox. The lunchbox was a Valentines Day gift from my mother-in-law, so cute!

The weekend is almost here!

I have a long run, yoga session, and a special dinner planned. I need to catch up with all my blog buddies and see what their up to.

celebrating the beginning of a new week

Happy Monday!

It’s the last day of the month and ironically the beginning of a new week. As we say good-bye to January 2011 let us embark on a new week full of adventures and aspirations.

In honor of a new week…celebration pancakes.

These pancakes have been spotted all over the blogosphere and clearly I was inspired to make some of my own.

Batter up!

A girl can dream.

My cakes topped with 1/2 banana, 1 tbsp peanut butter and sprinkles. Plus a side of low-fat vanilla yogurt for dipping.

Lunch was a packed salad that consisted of lettuce, cabbage, carrots and a hard-boiled egg. raspberry yogurt, two clementines, 5 stoneground crackers, and 1 laughing cow rounded out the meal.

It took 20 minutes to remove a thick sheet of ice from my car windows before driving home from work.

Dinner was a late an I probably could have skipped it, but sometimes if I don’t eat enough before bedtime it affects my falling asleep.

 Comfort food.

 Scrambled egg with peppers, cabbage, dash of garlic, dash of cumin, S +P, and nutritional yeast. Of course I had a small side of chips and salsa, what can I say I’m addicted.  Sadie’s Salsa and Naturally Preferred Tortilla chips both seem to be lower in sodium than some other well-known commercial brands.

Dessert.

Easy mango bowl

  • 1 cup frozen mango (found at Trader Joe’s)
  •  1/4 cup vanilla yogurt
  • 1 tbsp granola
  • sprinkle of coconut.

I’m not really sure I can call this dessert because in my opinion it is so dang healthy. Is it possible to call something “healthy” dessert? I think so!

Speaking of desserts my goal for January was limit them to three per week. Overall I think I did pretty well, except for last night when I raided the cookie jar.Smh oh well.

seriously though have you had a chace to think about your goals for February?

December’s goal was to drink less coffee and diet coke and instead drink more water. Done.

January’s goal was to limit deserts to three per week. Done

February’s goal is to eat out less. In progress.

Wednesday night, party night (WIAW)

I’m having a party with Jenn at Peas and Crayons every Wednesday night!

What I ate Wednesday is way to share with y’all everything I ate on Wednesday and hopefully get you involved too. Feel free to share something  about a favorite food you had on Wednesday or any other day during the week. I’ll either be showcasing a few of my favorite meals, or giving a full Wednesday recap. Since I’m already a day late, I’ll show you what I had yesterday

First up breakfast:

Sweet or savory? Pancakes or eggs? Coffee? definitely coffee. Breakfast could possibly be my most favorite meal of the day. I wake up for the sheer pleasure of starting the day our right with a fabulous meal.  Other times I wake up stumble to the kitchen prepare a little somethin somethin and tow it back to the room with me.

 French Toast

One slice of bread dredged in a beaten egg with a splash of soymilk. Topped with 1/2 grilled banana, 1 tbsp nuttzo, a dab of pumpkin butter and sprinkle of apricot granola. And a cup of joe of course.

 

Lunch:

75 minutes of hot vinyasa left me wanting protein and apples. Yoga was…uneventful. Maybe I should have been concentrating more instead of letting my mind wander. It’s so hard to be still sometimes. Ya know!?

Egg sandwich

A fried egg between a toasted english muffin topped with one morning star sausage link and a glob of Sadie’s salsa. On the side was a handful of Food Should Taste Good Chips in their Olive flavor, new for me. A sliced apple with Stoneyfield apple cinnamon yogurt (also new) for dipping. Both the chips and the yogurt were very good. I highly recommend them.

Dinner:

The hubs and I had another date night at the YMCA. I think he’s the one dragging me to the gym now, instead of vice versa. He ran two miles and lifted weights while I ran a slooooow five miles on the treadmill. It took way longer than I care to admit to run five miles. It’s not that I felt heavy or sluggish just a little wore out. Maybe 75 minutes of hot yoga is not such a good idea the same day as long run, you think? After our date we picked up L.a and went to a small Mexican establishment near our home for a fundraiser. The restaurant gave back 15% of our meal to L.a’s school.

Look at all that veg! I was so hungry I started eating before taking a pic. oops. The burrito came with rice but I requested beans instead for the added protein. I was so surprised at how fresh and clean the vegetables tasted, definitely not frozen. The flavors were mild and comforting.

If you’ve never had Toblerone run out and get some now, or ask for some for Valentines Day. In my opinion the original is the best but any variety will do.

Mango smoothie

Smoothies are quick and easy to make. They’re satisfying , not too filling, and decadent enough to skip dessert.

The combinations and ingredients are endless. It’s up to you to decide what goes in the blender.  Use your imagination and have fun, listen to your body, what are you craving? Oranges, bananas, kale? Vitamin C, potassium, beta carotene?

 You get the picture.

Tonight I wanted mangoes! What’s so special about mangoes you ask, well according to The National Mango Board:

Mangos are high in vitamin C and A

Vitamin C promotes healthy immune function and collagen formation. Vitamin A is important for vision and bone growth.

Mangos are high in dietary fiber.

Mangos contain over twenty different vitamins and minerals.

I suppose my body is asking for some anti-oxidant properties, no?

here’s what I had for dinner.

Maria’s Mango Smoothie

Into the blender

  • 1 cup frozen mango chunks
  • 1 clementine
  • 1/2 cup kefir (found in the yogurt aisle)
  • 2 tbsp vega smoothie powder in mango tango

Topped with

  • 1/2 kashi pumpkin flax bar, crumbled
  • 1 tbsp unsweetened coconut flakes
  • 1 tbsp better n’ peanut butter
  • a few slices of banana
  • 1 tsp pumpkin butter

Big plans for the morning.
